Mini Meatloaf

Hello Everyone,
So today I tackled meatloaf, but as you know I love making things mini sized so I used a muffin tin to make individual meatloaf muffins. This recipe is super easy and only requires 4 ingredients, you read that right, only 4 ingredients. The best part is that these are already portioned out for lunch and you can freeze them for easy freezer individual meals.

Ingredients:
  • 1 lb of ground beef (I like to use the 85% Meat  / 15% Fat)
  • 1/2 box of Savory Herb Stovetop Stuffing
  • 1 Egg
  • 1/4 cup of milk 
Oven: 400°F       Cooking Time:  18 minutes   Serves: 1-2 muffins per person / 5-10 people

How to Put It Together:
  1. Preheat the oven to 400°F
  2. In a medium sized bowl whisk together the  egg and milk.
  3. Mix in the stuffing
  4. Using your hands combine the mixture with the ground beef. 
  5. Press the mixture into the muffin tin. I filled mine almost to the top. Don't worry about greasing the muffin tin or anything because the beef won't stick I promise. 
  6. Bake for 18 minutes - you will know they are done because they will be brown on top and will have pulled away from the sides. 

Baking Options:

  • You can opt to bake with your mini meatloafs topped with BBQ sauce or ketchup too!

Serve:
  • Serve with stuffing, mashed potatoes, and veggies like I did it's delicious.
