So I try not to use pre-made or boxed goods too often but my mom purchased the Duncan Hines Carrot Cake and Creamy Home-Style Cream Cheese Frosting and it does say new and improved on the box so I thought I'd give it a shot. Instead of making a cake I made little carrot cupcakes to make portion control easier.
Like all boxed cake mixes it was easy to put together, this one does have an extra step though. There is an extra pouch of dried carrots and rasions that you need to rehydrate but this does help with the flavor and texture of the cake.
I would say this is a good runner-up to freshly made carrot cake. And if you've ever made carrot cake from scratch you know that it is a lot of work, especially if you want a moist and fluffy cake.
I would say that the cake did come out moist and paired well with their frosting but I did find it tasting different and having a slightly different texture than freshly made carrot cake but I'm going to say that it came mostly from the dehydrated carrots.
So if you need a carrot cake in a jiffy I would pick up this box, but when baking it bake it on the least amount of time that is required.
