Decadent Chocolate Sandwich Cookies

These were inspired by a coworker that brought in these cookies right before Christmas. They kind of remind me of fluffy oreos or a whoopie pie, I don't know if you've every had those fluffy oreos but they are absolutely delicious. This recipe was based of off Taste of Home recipe my coworker found online. I promise if you try these you will never think of oreos the same way again.

  • 2 packages of Betty Crocker devil's food cake mix (regular size)
  • 4 eggs, lighty beaten
  • 2/3 cup canola oil
  • 1 8oz package of cream cheese, softened at room temperature
  • 1/2 cup butter, softened
  • 3 1/2 cups of confectioners' sugar
  • 1/2 tsp vanilla extract
Oven: 350°F      Cooking Time: 10-15 minutes        
Serving Size:  2 servings per person, yields 24 servings

How to Put It Together
  1. Preheat the oven to 350°F  
  2. In a bowl, beat the cake mix, eggs, and oil. The batter will be very stiff, but that's what you want.
  3. Roll the batter into 1-inch balls; place them on an ungreased baking sheet and flatten slightly with your palm.
  4. Bake for about 8-10 minutes or until a slight indentation remains when lightly touched. Remove them from the oven and allow them to cool completely.
  5. In another bowl, beat together the cream cheese and butter until light fluffy.
  6. Add the sugar and vanilla and mix until smooth.
  7. Now place your filling in a ziplock back, cut the corner and pipe the filling on a cookie and then press another cookie on top of the filling. I recommend piping a dollop in the center that way when you press the other cookie on top the filling won't come out over the edge.
